Grilled Rainbow Trout or Fresh Salmon

Ingredients: 1 Trout or Salmon, cleaned, head and fins removed vegetable oil as needed 4 tbsp. Apple Salsa (see below) 1 fresh herb sprig 1 lemon, quartered “Shaman Spice” to taste Instructions for Grilled Trout or Salmon: Lightly brush sides of trout or Salmon with oil. Season the flesh side of the Trout or Salmon generously with “Shaman Spice”. Grill the flesh side down on very hot, well oiled grill. Gently cook for 2-4 minutes and then turn. Cook briefly on other side. The Trout will cook faster so be careful not to over cook. Serve Trout or Salmon with Apple Salsa and garnish with lemon and herb sprig. |
