Apricot and Bourbon Grilled Free Range Chicken


Serves 4

Ingredients:
2 boneless, skinless chicken breasts

Ingredients for Marinade:
¼ cup Dijon mustard
¼ cup brown sugar
2 tbs. Soy sauce
2 tb sp. Bourbon
1 tsp. Worcestershire sauce
1tsp. “Shaman Spice

Ingredients for Basting sauce:
¼ cup apricot preserves
2 tbs. White wine vinegar
2 tsp. Worcestershire sauce
2 tsp. Dijon mustard
2 tsp. Honey
¼ tsp. “Shaman Spice

Instructions:
Combine marinating ingredients and transfer to shallow pan. Split the chicken breasts in half by removing the cartilage that divides the 2 halves.
Place the chicken in the marinade and turn several times so chicken is coated. Wrap in plastic wrap and refrigerate for 1-3 hours.

Combine basting sauce ingredients in a small saucepan and simmer for about 10 minutes. Refrigerate until needed.
Remove the chicken from the marinade and place on pre-heated grill. Grill for approximately 2 minutes, brush with basting sauce, turn and brush with more sauce.
Continue to baste frequently, until done.
